The harvest in this vineyard is carried out in two steps spaced a week apart, perforated boxes of about 18-20 kg are used to protect the integrity of the grapes in the best possible way up to the pressing. Maceration takes place in steel fermenters, where the fermentation temperature can be regulated, and lasts about a week.
The wine then stops in carats (partly new and partly already used), in which the malolactic fermentation takes place, for 16 months, before being re-assembled in steel tanks. It is bottled in August and put on the market, after a year of bottle, three years after the harvest.
