Description

The lemons and candied apricots bring the flavors and aromas of the Mediterranean into a dove with a soft and light dough. An elegant, fresh and delicate reinterpretation of the traditional Galup recipe. It is covered with an Italian hazelnut glaze “Tonda Gentile Trilobata” and is embellished with granulated sugar and whole almonds.

Ingredients

Type “0” soft wheat flour - Butter (Milk) - Sugar - Candied apricot 9% (Apricot - Sucrose - Glucose/fructose syrup - Acidifier: citric acid) - Candied lemon peel 9% (Lemon peel, glucose-fructose syrup, sucrose, concentrated lemon juice) - Yolk of fresh category A eggs from free-range hens - Natural yeast (type “0” soft wheat flour - Water) - Emulsifiers: mono and diglycerides of fatty acids - Whole milk - Invert sugar - Salt - Natural flavors - Natural Bourbon vanilla flavour. INGREDIENTS OF THE ICING 12%: Sugar - Fresh category A egg white from free-range hens - Tonda Gentile Trilobata hazelnut 9% - Rice flour Rice starch - Impalpable sugar (Sugar - Wheat starch) - Sunflower seed oil - Natural flavourings. Garnished with 4% granulated sugar and 2% whole almonds. May contain other nuts, mustard and soy.
